This Sprinter Van conversion was completed using the Esplori interior kit for a couple and their dog to travel for a long weekend to a couple of weeks in off-grid locations.  The open floor plan and minimalistic design make it easy to pack up and get out of town.  The electrical system is able to run most household appliances, and with a heater, comfortable bed and refrigeration, there isn't much more you need.
